So here's what we are eating this week:
Monday: Valentine's Dinner (everything is red or heart-shaped). Pizza Meatloaf, Make Ahead Mashed Potatoes (tinted with a roasted red pepper), roasted radishes, and Strawberry Dream for dessert
Tuesday: Black Bean Burritos, Copycat Chipotle Rice, Carrot Sticks
Prep work the night before: Soak black beans
Prep work that morning: Cook black beans. Freeze any extras in 2 cup portions.
Wednesday: Roasted Chicken, Rice Pilaf, Steamed Broccoli
Prep work the night before: Soak rice
Prep work that morning: Cook rice.
Thursday: Lentil and Beef Sloppy Joes, Homemade English Muffins, Roasted Cauliflower
Prep work the night before: Sprout lentils, Soak English Muffin dough
Prep work that morning: Make English Muffins
Friday: Cheesy Chicken Asparagus Bake, Salad
Prep work the night before: Soak rice
Prep work that morning: Cook rice.
Saturday: Homemade Pizza, Broccoli Slaw Salad, Fruit Salad
Prep work the night before: Soak pizza dough
Prep work that morning: Cut up veggies
