
I don't know about the rest of you, but this time of year is crazy for me. I make a lot of handmade gifts so right now I am rushing to get everything done! Consequently lots of simple meals are on the menu this week.
So here's what we are eating this week:
Sunday: Make your own Chipotle night
Monday: Court of Honor dinner (Yay! I get a break from cooking!)
Tuesday: Mexican Pizzas, steamed brocolli, tangerines
Prep work the night before: Soak black beans
Prep work that morning: Cook black beans. Freeze any extras in 2 cup portions.
Wednesday: Leftover Lasagna, Carrots
Thursday: Beans and rice with salsa
Prep work the night before: Soak rice, soak beans
Prep work that morning: Cook rice, beans.
Friday: Homemade Pizza, Salad, Fruit Salad
Prep work the night before: Soak pizza dough
Prep work that morning: Cut up veggies
Saturday: Chicken and dumplings, Mashed Potatoes, Green Beans
