Healthy Weekly Meal Plan - November 8, 2010

Yay!  Marching band season is over.  The band ended their season on a high note earning a superior rating at state finals. They had a great show!  Now that marching band season is over, I am looking forward to the fact that we can actually resume eating meals with all of us around the table. 


So here's what we are eating this week:

Sunday:  Chicken and dumplings, mashed potato casserole, leftover roasted butternut squash soup

Prep work that morning:  Make the dumpling dough with sourdough starter, let stand until ready to make the chicken and dumplings.  Make mashed potato casserole.  Divide in 2 casserole dishes.

Monday: Pizza Meatloaf (vegetarian version), leftover mashed potato casserole, steamed carrots.

Prep work the night before:  Soak rice
Prep work that morning:  Cook lentils, assemble meatloaf

Tuesday:  Mexican Baked Potatoes, brocolli, bread
Prep work the night before:  Soak black beans
Prep work that morning:  Cook black beans.  Freeze any extras in 2 cup portions.


Wednesday:   Chicken Asparagus casserole, salad, grapes
 Prep work the night before:  Soak rice
Prep work that morning:  Cook rice and assemble casserole.

Thursday:  Beans and rice with salsa
Prep work the night before:  Soak rice, soak beans
Prep work that morning:  Cook rice, beans. 

Friday:  Homemade Calzones, Salad, Fruit Salad
Prep work the night before:   Soak pizza dough
Prep work that morning:  Cut up veggies 

Saturday:  Homemade Ravioli, Green beans, Leftover fruit salad

Prep work that morning:  Soak pasta dough, Assemble filling.
