A Special Valentine Treat


This dessert is a departure from the healthy fare I usually serve, but it is oh so good! It makes a great treat for a special occasion.  I found this recipe years ago in Taste of Home magazine and it has been a favorite holiday recipe ever since.

Valentine Napoleans
  • 1 package frozen puff pastry, thawed (see note)
  • 1 cup skim milk
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1-1/4 cups sliced fresh strawberries
  • Additional powdered sugar for dusting

On a silicone baking sheet (or a lightly floured cutting board), roll out each pastry sheet.  Using a heart-shaped cookie cutter, cut out as many hearts as you can from the pastry.  Place on ungreased baking sheets. Bake at 400° for 8-11 minutes or until golden brown. Remove to wire racks to cool.

In a large bowl, whisk milk and pudding mix for 2 minutes until it is starting to thicken.  (If you use a KitchenAide Mixer, it may take less time.)   Let stand for a couple of minutes until it is soft-set.  In another large bowl, beat cream until it begins to thicken. Beat in powdered sugar until soft peaks form. Fold into pudding.

Split puff pastry hearts in half. Place bottom halves on serving plates. Spoon 1/4 cup filling over each; top with sliced strawberries and pastry tops. Dust with additional powdered sugar.

Notes
  • We generally only use half the box of puff pastry to feed our family of 6.  The remainder can be frozen. 
  • Store any remaining filling in the fridge.
  • You can also adapt this recipe for other holidays.  For St. Patrick's Day, use a shamrock cutter and sliced kiwi for the fruit.
